Ambergris is a strong odor produced by the gut of a sperm whale (Physeter macrocephalus). Its role is to protect the intestinal mucosa from the indigestible debris of the mollusk on which the sperm whale eats, stiffening and blending in around it.


The word Ambergris comes from the Old French word "ambre gris", meaning "gray amber", contrary to "yellow amber", which refers to resin amber. It was used to make perfumes.


Chemically, ambergris is mainly composed of waxy, unsaturated, high molecular weight alcohol mixture, the main chemical composition is salivalary ether. Other chemical components, such as epidermal sterols and conjugated sterols, are also found, but sialilis ether is the substance that gives ambergris a typical odor.


Because sperm whales are a protected species and cannot be hunted, ambergris has now become extremely rare and is replaced by synthetic substances. More rarely, it is possible, if removed from stranded carcasses, to use natural, or sometimes by fishermen, from animals.
